Israeli Food - It is delicious!

Israeli food is one of the most creative cuisines in the world. It is delicious!
Israeli cuisine, which food critics have still to agree whether it exists or not, is rooted in the history, the geography and the religion of the Jewish people.
Immigrants from over 80 countries brought with them recipes from distant and less distant lands which they prepared in accordance with Jewish dietary laws. To these recipes were added the native ingredients of the land of Israel with other elements of the wider cuisine of the Middle East.The origin of some dishes are well known, such as "borscht" soup brought by Eastern European Jews.
The "Israeli salad" of tomatoes and cucumbers cut in very small cubes, the "falafel", olives, olive oil, wheat, chick peas, and yogurt are either Mediterranean or Middle Eastern additions. Under the influence of Jewish dietary laws, pork and shellfish are left out of the Israeli cuisine. However Jewish holidays have helped in creating "Sufganiot" in Hanukkah and "Haroset" in Passover.
The fact that the main meal of the day is lunch rather than dinner reflects another Mediterranean influence. Fresh fruits and vegetables which are in abundance are included in every meal of the day. Cakes, all sorts of them, are a must on Friday night family dinners and on Saturdays.
